Louie's Birthday Cake
Alicia saw a
picture on the internet of a meatloaf cake, with mashed potato icing
and thought it'd be a swell birthday meal for Louie!
She healthied it up with all organic ingredients and some veggies
though, since he isn't getting any younger! Louie loves this cake
so much that he gives out little cries of doggy joy and rolls over
without being asked when it's being slopped into his bowl.
Makes about 8 servings.
The cake:
2 lbs ground beef
3 large cloves of garlic, or one clove of elephant garlic, minced
3 large carrots, chopped
1 small zucchini, chopped
2 eggs
1 cup rolled oats
1 tsp shoyu
The Icing:
4 cups yukon gold or red potatoes, peeled and cut into uniform chunks
organic chicken stock to cover (about 5 cups)
pinch of salt
whole organic milk (optional)
Ketchup (optional)
Birthday candles (optional)
Preheat the oven to 375.
Combine the first six ingredients in a large bowl and mix fairly well
(Alicia squished everything together with her hands for about 2
minutes). Divide in two portions and spread each portion into a
9" cake pan. Cover pans loosely with foil and bake in the oven
for about 40 minutes.
In the meantime, boil potatoes in seasoned chicken stock until tender.
Drain and mash with a little leftover stock or milk.
Remove one "cake" layer onto a large plate and "ice" it with half
of the mashed potatoes. Plop the other layer on top, and
ice it with the remaining potatoes. Decorate with ketchup and
candles, sing "Happy Birthday" and serve. It's probably best that
you don't try to make your dog blow out his/her candles.
